Is there any way to lock an Artboard in the preview?
I would like to modify a component while being able to preview how it impacts on the whole design, but editing a symbol makes the preview to preview that symbol.

There are a couple of ways you can achieve this, specially if you’d like to see the changes in real-time.
Using the iOS/iPad app, you can launch the Document in the app, and keep on working on the Mac. Any Artboard that you open, will automatically update with any of the changes you make on the Mac app. You do not need to activate the Mirror functionality. It’ll just update on the fly.
You can also get this to work if you use the original Mirror app, where deactivating the Show Current Artboard option, you’ll be able to see the changes in real-time without the app changing to your selection automatically.
Sadly, there’s no way to do this (yet) on the Mac app, and we’ll make sure to pass this request along to the team. Let me know if this helps!
Unfortunately my old iPad doesn’t support any Mirror app for iPad.
