There are two different panels for customizing text, and it’s driving me crazy. The lack of consistency — in this and other areas — is both confusing and frustrating.
I’m sorry you’re having issues with the new UI. About the changes and duplicity you’re commenting on, I’m afraid this is basically the same functionality we had before. We have changed the layout a bit, that’s true, but it should be easy to get the hang of it after a bit of use.

Why can’t I change the font family when editing text layer in a symbol?
It’s an instance of a Symbol and you’re not supposed to change the font there. If you want a different font, you can either create a new Symbol or change the Source. I’m afraid that the fonts themselves are not overridable, sorry.
However, I see it as a legitimate feature request that I’ll pass along. After all, you can do it now with Styles, and I can follow your logic here.

Yeah, Symbol sources have never been updateable from the instances.
