Unable to use iPhone to preview sketch files offline interactively.I often design without an internet connection, but I cannot use a data cable or a local network for previewing.

Try this version of Sketch Mirror that has both support for local network and USB connection for local documents – Sketch Mirror on the App Store
This is the legacy version of Mirror which means it’s not in active development unforuantely, but it should still work for you.
This is indeed too old; it hasn’t been updated for 5 years and feels very slow.
