I’m thinking about moving to Sketch (mostly for the offline view) but doing some feature comparison compared to my existing tool and one big thing that seems to be missing is interactive forms like text inputs and users actually being able to enter text and other data into forms.
This is something I currently use a lot for things like usability testing and to give devs an idea of things like keyboard tab order.
Is there no way I can do this currently?

Welcome to the Forum! Thanks for reaching out.
From your post I think that your usability tests involve some advance data input validation, so that real text input is a requirement.
Sketch can help you craft high fidelity prototypes with text inputs (and any other UI component) but but there’s no real text input in prototype playback from a keyboard; although you can create a mockup of text input.
