It would be nice if, for example, a symbol that uses AutoLayout would not reset its size if I resize it in the layout and change the text in it.
It might be a good idea to take into account whether I have resized the symbol in the layout and not resize it whenever I change the symbol until I click the “Set to Original Size” button.
The same applies to nested symbols.

Any updates here? I just connected my sketch file to a library of imported symbols with the plugin camilo. It reset all my overwriten symbols to original size, in case I changed it. Also in my daily workflow I stumble over this quite a lot of times when adjusting only a single letter in the overwrites.

Can you share a bit more details with us? You can manually resize a symbol, swap it for a different one and keep the override and the size. Check out this quick demo:
